- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup all-purpose flour
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow dish, mix the Parmesan cheese and breadcrumbs together.
- In another dish, beat the eggs.
- In a third dish, place the flour.
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, dip in the beaten eggs, and then coat with the Parmesan and breadcrumb mixture.
- In a large skillet, heat olive oil over medium heat and sear the chicken breasts until golden brown on both sides.
- Transfer the chicken to a baking dish.
- In the same skillet, add heavy cream and chicken broth, stirring to combine.
- Pour the sauce over the chicken in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate the chicken in Italian seasoning before breading.
- Serve with a side of pasta or steamed vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
