Description

A unique and delicious take on traditional mac and cheese, these quesadillas are perfect for a quick and kid-friendly dinner.


Ingredients

  • 2 cups cooked macaroni
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup cream cheese
  • 4 large flour tortillas
  • Butter for frying

Instructions

  1. In a large bowl, combine the cooked macaroni, shredded cheddar cheese, milk, and cream cheese until well mixed.
  2. Heat a skillet over medium heat and add a small amount of butter.
  3. Place one tortilla in the skillet and spread a generous amount of the mac and cheese mixture on half of the tortilla.
  4. Fold the tortilla over to create a half-moon shape and cook until golden brown, about 3-4 minutes.
  5. Flip the quesadilla and cook the other side until golden and the cheese is melted.
  6. Remove from the skillet and repeat with the remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • Feel free to add cooked bacon or vegetables for extra flavor.
  • Serve with salsa or sour cream for dipping.
