- 2 cups cooked chicken, shredded
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 cup frozen mixed vegetables
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, rice, chicken broth, cream of chicken soup, mixed vegetables, onion powder, garlic powder, salt, and pepper.
- Pour the mixture into a greased 9×13 inch baking dish.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle the cheddar cheese on top, and bake for an additional 15 minutes or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Feel free to substitute the mixed vegetables with your favorite veggies.
- For a spicier version, add some diced jalapeños or hot sauce.
