- 4 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Place the chicken breasts in a baking dish and pour the maple Dijon mixture over them.
- Add the cubed sweet potatoes around the chicken in the baking dish.
- Toss the sweet potatoes in the remaining sauce to coat.
- Bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
- Garnish with fresh thyme if desired and serve warm.
Notes
- For extra flavor, marinate the chicken in the maple Dijon mixture for a few hours before cooking.
- This dish pairs well with steamed vegetables or a fresh salad.
