Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the maple Dijon mixture over them.
  4. Add the cubed sweet potatoes around the chicken in the baking dish.
  5. Toss the sweet potatoes in the remaining sauce to coat.
