- 4 chicken breasts
- 1/2 cup maple syrup
- 2 sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cinnamon
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix maple syrup, olive oil, salt, pepper, cinnamon, and rosemary.
- Place chicken breasts in a baking dish and pour the maple mixture over them.
- In another bowl, toss sweet potatoes with olive oil, salt, and pepper.
- Add sweet potatoes to the baking dish around the chicken.
- Bake for 25-30 minutes or until the chicken is cooked through and sweet potatoes are tender.
- Serve warm, drizzling any remaining glaze over the chicken and sweet potatoes.
Notes
- For extra flavor, marinate the chicken in the maple mixture for a few hours before cooking.
- Feel free to add other vegetables like carrots or Brussels sprouts.
