- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened

- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Mix in a medium bowl the flour, powdered sugar, and salt.
- Beat the butter in another bowl until creamy, then add the flour mixture and combine until crumbly.
- Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
- Whisk together the eggs, granulated sugar, lime juice, lime zest, baking powder, and baking soda in a separate bowl.
- Pour the filling over the crust and spread evenly.
- Bake for 20-25 minutes or until set and lightly golden.
- Allow to cool completely before cutting into squares. Dust with powdered sugar before serving if desired.
Notes
For a unique touch, consider adding a hint of coconut milk or a dash of tequila for an adult version.
