- 1 lb Boneless skinless chicken breasts
- 8 oz Pasta penne, fettuccine, or rigatoni
- 1 cup Heavy cream
- 0.5 cup Chicken broth
- 0.75 cup Freshly grated parmesan cheese
- 0.5 cup Sun-dried tomatoes, julienned
- 4 cloves Garlic, minced
- 2 tbsp Olive oil
- 1 tsp Italian seasoning
- 0.5 tsp Red pepper flakes
- Salt and freshly ground black pepper, to taste
- 2 tbsp Butter
- Baby spinach, for freshness
- Fresh basil, for garnish
- Parmesan shavings or toasted pine nuts, for garnish
- Crusty bread, for serving
Instructions
- Cut your chicken breasts into even, bite-sized pieces about 1-inch thick. Season generously with salt and freshly ground black pepper.
- Sear seasoned chicken pieces in a skillet, golden brown on one side.
- Melt butter in the same skillet over medium heat. Add garlic and cook for 30 seconds, then stir in sun-dried tomatoes and cook for another minute.
- Simmer a skillet with creamy sauce featuring chicken pieces immersed in a smooth white sauce.
- Cook your pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
- Toss the creamy sauce, chicken, and pasta all together in a skillet.
- Serve hot with a sprinkle of fresh basil and optional garnishes.
Notes
For a vegetarian version, substitute chicken with vegetables and use vegetable broth.
