Description

A creamy, garlicky pasta dish featuring tender chicken and sun-dried tomatoes, perfect for romantic dinners and family gatherings.


Ingredients

  • 1 lb Boneless skinless chicken breasts
  • 8 oz Pasta penne, fettuccine, or rigatoni
  • 1 cup Heavy cream
  • 0.5 cup Chicken broth
  • 0.75 cup Freshly grated parmesan cheese
  • 0.5 cup Sun-dried tomatoes, julienned
  • 4 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp Red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp Butter
  • Baby spinach, for freshness
  • Fresh basil, for garnish
  • Parmesan shavings or toasted pine nuts, for garnish
  • Crusty bread, for serving


Instructions

  1. Cut your chicken breasts into even, bite-sized pieces about 1-inch thick. Season generously with salt and freshly ground black pepper.
  2. Sear seasoned chicken pieces in a skillet, golden brown on one side.
  3. Melt butter in the same skillet over medium heat. Add garlic and cook for 30 seconds, then stir in sun-dried tomatoes and cook for another minute.
  4. Simmer a skillet with creamy sauce featuring chicken pieces immersed in a smooth white sauce.
  5. Cook your pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  6. Toss the creamy sauce, chicken, and pasta all together in a skillet.
  7. Serve hot with a sprinkle of fresh basil and optional garnishes.

Notes

For a vegetarian version, substitute chicken with vegetables and use vegetable broth.
