- 2 medium butternut squash, peeled and cubed
- 1/2 cup goat cheese, crumbled

Instructions
- Preheat the oven to 400°F (200°C).
- Place the cubed butternut squash on a baking sheet and drizzle with olive oil.
- Roast in the oven for 25-30 minutes, or until tender.
- Transfer the roasted squash to a mixing bowl.
- Add the goat cheese, chopped rosemary, salt, and pepper.
- Mash the mixture until creamy and well combined.
- Serve warm as a side dish.
