- 4 medium fillets White Fish (Cod, Halibut, or Sea Bass)
- 1 lemon, sliced thinly
- 0.25 cup Fresh Parsley, chopped
- 3 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 1 cup Cherry Tomatoes, halved
- 1 piece Bell Pepper, thinly sliced
- 1 piece Zucchini, thinly sliced
- 1 teaspoon Dried Oregano
- 1 teaspoon Paprika
- Salt and Black Pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking dish with parchment paper.
- Arrange the white fish fillets in the dish, ensuring they are spaced evenly.
- Season the fish with salt and black pepper to your preference.
- Drizzle the olive oil over the fish fillets.
- Spread the minced garlic evenly on top of the fillets.
- Place the sliced lemons around and on top of the fish.
- Scatter the halved cherry tomatoes, sliced bell pepper, and zucchini around the fish in the dish.
- Sprinkle the dried oregano and paprika over the vegetables and fish.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 25-30 minutes, or until the fish flakes easily with a fork.
- Remove the foil in the last 5 minutes for a slightly golden finish.
- Garnish with fresh parsley before serving.
