Description

Ingredients

  • 2 slices of whole grain bread

  • 1/4 cup feta cheese, crumbled
  • 1/4 cup spinach, fresh
  • 1/4 cup tomatoes, diced

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Crack the egg into the skillet and cook to your desired doneness.
  3. While the egg is cooking, toast the whole grain bread.

  5. Top the egg with crumbled feta cheese, fresh spinach, and diced tomatoes.
  6. Season with salt and pepper to taste.
