- 2 cups couscous
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- Salt and pepper to taste
- 1 cup chicken broth
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the onion and garlic; sauté until translucent.
- Add the diced chicken; cook until browned.
- Stir in the red bell pepper, zucchini, cumin, paprika, turmeric, salt, and pepper.
- Pour in the chicken broth; bring to a simmer and let cook for about 10 minutes.
- Meanwhile, prepare the couscous according to package instructions.
- Fluff couscous with a fork and serve in bowls topped with the chicken mixture.
- Garnish with fresh parsley and enjoy!
