Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges for serving


Instructions

  1. Heat olive oil in a skillet over medium heat. Season the diced chicken with garlic powder, onion powder, oregano, salt, and pepper. Cook until the chicken is golden brown and fully cooked, about 6-8 minutes.
  2. Combine the cooked rice, cherry tomatoes, cucumber, red onion, olives, and parsley in a bowl.
  3. Assemble the bowls by adding the rice mixture and topping with the chicken and crumbled feta cheese.
  4. Serve with lemon wedges on the side.
