Description

A flavorful Mediterranean dish featuring tender chicken, artichokes, and olives, perfect for a healthy dinner.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 cup artichoke hearts, quartered
  • 1/2 cup green olives, pitted and sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them well with the marinade.
  4. In a baking dish, arrange the marinated chicken thighs, artichoke hearts, and olives.
  5. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through.
