A refreshing and healthy bowl featuring lemon-dill chicken, perfect for a spring dinner.
Ingredients

- 2 chicken breasts
- 1 lemon, juiced and zested
- 2 tablespoons fresh dill, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
Instructions
- In a bowl, combine lemon juice, lemon zest, dill, olive oil, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Grill or pan-sear the chicken until fully cooked, about 6-7 minutes per side.
- Let the chicken rest for a few minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
- Top the salad with sliced chicken and drizzle with any remaining marinade.
