Description

A refreshing and healthy bowl featuring lemon-dill chicken, perfect for a spring dinner.


Ingredients

Scale
  • 2 chicken breasts
  • 1 lemon, juiced and zested
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled


Instructions

  1. In a bowl, combine lemon juice, lemon zest, dill, olive oil, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Grill or pan-sear the chicken until fully cooked, about 6-7 minutes per side.
  4. Let the chicken rest for a few minutes before slicing.
  5. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  6. Top the salad with sliced chicken and drizzle with any remaining marinade.
