Ingredients

  • 2 cups cherry tomatoes, halved

  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, sliced

  • 2 tablespoons lemon juice

Instructions

  1. Cook the orzo pasta according to package instructions, then rinse under cold water and drain.
  2. Combine the cooked orzo, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives in a large bowl.
  3. Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss to combine.
