- 8 oz pasta (any shape)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, diced
- 1/4 cup olives, sliced (optional)
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- Combine in a large bowl the cherry tomatoes, cucumber, feta cheese, red onion, and olives (if using).
- Whisk together in a small bowl the olive oil, red wine vinegar, oregano, salt, and pepper.
- Add the cooled pasta to the vegetables and pour the vinaigrette over the salad.
- Toss everything together gently to combine.
- Serve immediately or refrigerate for an hour to let the flavors meld.
Notes
This salad is best served cold and can be made in advance for optimal flavor.
