Ingredients

- 4 flour tortillas
- 1 cup shredded cheese (like mozzarella or feta)
- 1 cup chopped spinach
- 1/2 cup diced bell peppers
- 1/2 cup sliced olives
- 1/4 cup sun-dried tomatoes (chopped)
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Layer with spinach, bell peppers, olives, sun-dried tomatoes, and the remaining cheese.
- Fold the tortilla in half and cook for 2-3 minutes until golden brown.
- Flip and cook the other side for another 2-3 minutes.
- Remove from skillet, cut into wedges, and serve warm.
Notes
For a unique flavor, mix different types of cheese or add red pepper flakes for extra heat.
