Description

A delicious and healthy Mediterranean dish featuring roasted eggplant, perfect as a side or main course.


Ingredients

  • 2 medium eggplants, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants and place them in a large bowl.
  3. Drizzle olive oil over the eggplant slices and sprinkle with salt, pepper, garlic powder, and oregano. Toss to coat evenly.
  4. Arrange the eggplant slices in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
  6. In the last 5 minutes of roasting, add the halved cherry tomatoes to the baking sheet.
  7. Remove from the oven and sprinkle with crumbled feta cheese.
  8. Garnish with fresh basil before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Serve with pita bread or over a bed of quinoa for a complete meal.
