Ingredients

- 2 medium eggplants, sliced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants and place them in a large bowl.
- Drizzle olive oil over the eggplant slices and sprinkle with salt, pepper, garlic powder, and oregano. Toss to coat evenly.
- Arrange the eggplant slices in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
- In the last 5 minutes of roasting, add the halved cherry tomatoes to the baking sheet.
- Remove from the oven and sprinkle with crumbled feta cheese.
- Garnish with fresh basil before serving.
Notes
- For a spicier version, add red pepper flakes.
- Serve with pita bread or over a bed of quinoa for a complete meal.
