  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the chopped bell peppers, zucchini, cherry tomatoes, and red onion.
  3. Drizzle the olive oil over the vegetables and sprinkle with oregano, garlic powder, salt, and pepper.
  4. Toss the vegetables until they are evenly coated with the oil and seasonings.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  7. Remove from the oven and serve warm.
