A delicious and healthy Mediterranean-inspired dish featuring salmon and lemon-infused rice.


Ingredients

  • 2 salmon fillets
  • 1 cup rice
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pot, bring the vegetable broth to a boil and add the rice. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  3. While the rice is cooking, season the salmon fillets with olive oil, garlic powder, salt, and pepper.
  4. Place the salmon on a baking sheet and bake for 12-15 minutes or until cooked through.
  5. Once the rice is done, stir in the lemon zest and juice.
  6. Serve the salmon over the lemon rice and garnish with fresh parsley.
