Ingredients

- 2 salmon fillets
- 1 cup rice
- 2 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a pot, bring the vegetable broth to a boil and add the rice. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
- While the rice is cooking, season the salmon fillets with olive oil, garlic powder, salt, and pepper.
- Place the salmon on a baking sheet and bake for 12-15 minutes or until cooked through.
- Once the rice is done, stir in the lemon zest and juice.
- Serve the salmon over the lemon rice and garnish with fresh parsley.
Notes
- For added flavor, marinate the salmon in lemon juice for 30 minutes before cooking.
- Feel free to add vegetables like spinach or cherry tomatoes to the rice for extra nutrition.
