A delicious and easy-to-make Mexican beef casserole perfect for springtime family dinners.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 2 cups cooked rice
- 1 cup shredded cheese
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat.
- Add the black beans, corn, salsa, cooked rice, chili powder, cumin, salt, and pepper to the skillet. Stir to combine.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
