- 2 cups sweet corn kernels, canned, drained, and rinsed
- 1 cup feta cheese, crumbled
- 1/2 cup Parmesan cheese, grated
- 1 medium jalapeño, chopped
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup breadcrumbs or crushed tortilla chips
- 1/2 cup flour
Instructions
- Combine the sweet corn kernels, crumbled feta, grated Parmesan, chopped jalapeño in a large mixing bowl.
- Add fresh lime juice, chili powder, smoked paprika, cayenne pepper, salt, and black pepper to the corn mixture.
- Beat the eggs in a separate bowl and add to the corn mixture.
- Set up shallow dishes with flour and breadcrumbs.
- Scoop portions of the corn mixture and form into 1 to 1.5-inch balls.
- Dust each shaped bite in flour, dip into beaten egg, and coat with breadcrumbs.
- Heat oil in a skillet over medium heat until hot.
- Carefully place the coated corn bites into the hot oil, frying for 2-3 minutes on each side.
- Remove the cooked bites with a slotted spoon and drain on paper towels.
- Serve warm with lime wedges, zesty salsa, or creamy guacamole.
Notes
Experiment with spices or use fresh corn for enhanced flavor. Chill the mixture before shaping for better form.
