Description

A delicious homemade version of the Taco Bell classic Mexican Pizza, featuring layers of crispy tortillas, savory beef, and melty cheese.


Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 ounces refried beans (1/2 can)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives, sliced
  • 1/4 cup sour cream
  • 2 green onions (finely diced)


Instructions

  1. Add a large frying pan or skillet on medium heat.
  2. Place the ground beef in the pan.
  3. Break up the meat into small pieces as it cooks using a spatula or spoon.
  4. Sauté for about 5-8 minutes or until the meat is cooked through.
  5. Remove grease from the pan.
  6. Stir in the taco seasoning, water, and enchilada sauce.
  7. Mix until evenly combined.
  8. Let simmer for 1-2 minutes.
  9. Spread a layer of refried beans on one tortilla.
  10. Top with ground beef.
  11. Add a layer of cheese and place another tortilla on top.
  12. Spread 1 tbsp of enchilada sauce on top of the tortilla.
  13. Top with shredded cheese to evenly cover the top.
  14. Repeat with remaining tortillas to assemble all the pizzas.
  15. Preheat Air Fryer to 400°F.
  16. Carefully place the pizza in the air fryer working in batches (my air fryer fits one pizza at a time).
  17. Cook for about 5 minutes, or until the cheese melts and the tortillas are crispy.
  18. Repeat with remaining pizzas.
  19. Preheat oven to 350°F.
  20. Line a sheet pan with tin foil or parchment paper for easier cleanup (optional).
  21. Arrange the pizzas on the sheet pan leaving space between them.
  22. Bake for 8-10 minutes or until the cheese is melted and the tortillas are crispy.
  23. Add one pizza at a time into a large frying pan with a lid, on medium heat, add a splash of oil to coat the pan.
  24. Cook for 4-5 minutes or until the cheese melts and the bottom tortilla is crispy.
  25. Transfer the cooked pizzas to a serving plate.
  26. Top with optional garnishes – tomatoes, red onion, olives, sour cream, and green onion.
  27. Serve and enjoy!
