  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, black beans, corn, salsa, cumin, chili powder, bell pepper, onion, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Top with shredded cheese.
