- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup chopped bell pepper
- 1/2 cup chopped onion
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked rice, black beans, corn, salsa, cumin, chili powder, bell pepper, onion, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is bubbly.
- Let it cool for a few minutes before serving.
