Description

Delicious crispy tostada shells topped with refried beans, tender rotisserie chicken, and fresh veggies.


Ingredients

  • 4 tostada shells
  • 2 cups rotisserie chicken, shredded
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1 avocado, sliced
  • 1/2 cup crumbled queso fresco
  • 1/4 cup fresh cilantro, chopped
  • Sour cream (optional)
  • Salsa (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place tostada shells on a baking sheet and bake for about 5 minutes until crispy.
  3. Heat the refried beans in a saucepan over medium heat until warmed through.
  4. Spread a layer of refried beans on each tostada shell.
  5. Top with shredded rotisserie chicken.
  6. Add shredded lettuce, diced tomatoes, and onions on top.
  7. Finish with sliced avocado and crumbled queso fresco.
  8. Garnish with fresh cilantro.
  9. Serve with sour cream and salsa if desired.

Notes

For extra spicy tostadas, consider adding diced jalapeños.
