Description

A refreshing and zesty cocktail featuring shrimp, avocado, and a tangy tomato juice mix, perfect for summer gatherings.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup tomato juice
  • 1 avocado, diced
  • 1 lime, juiced
  • 1/2 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Tortilla chips or crackers for serving


Instructions

  1. Bring a pot of water to a boil and cook the shrimp for 2-3 minutes until pink and opaque. Drain and cool.
  2. Combine the cooled shrimp, tomato juice, avocado, lime juice, cucumber, red onion, bell pepper, and cilantro in a large bowl.
  3. Season with salt and pepper to taste.
  4. Mix gently and refrigerate for at least 30 minutes before serving.
  5. Serve chilled with tortilla chips or crackers.

Notes
