Delightful salad cups inspired by the traditional Mexican street food elote, bursting with vibrant flavors of grilled corn, lime, and cheese.
Ingredients

- 4 ears of fresh corn
- 1 cup mayonnaise
- 1 cup crumbled cotija cheese
- 1 tsp chili powder
- 1 lime, zested and juiced
- 1/2 cup chopped fresh cilantro
- Salt and pepper to taste
- 12 small cups for serving
Instructions
- Husk the corn and remove all silk.
- Boil a large pot of water.
- Add the corn to the boiling water and cook for 5-7 minutes until tender.
- Remove the corn from the water and allow it to cool.
- Cut the kernels off the cob and place them in a large mixing bowl.
- Add the mayonnaise, cotija cheese, chili powder, lime zest, and lime juice to the bowl.
- Mix well until all the ingredients are combined.
- Season with salt and pepper to taste.
- Fold in the chopped cilantro gently.
- Spoon the mixture into individual cups for serving.
Notes
For added sweetness, consider using sugar substitutes like stevia. Adjust the chili powder according to your heat preference.
