Description

A refreshing and vibrant salad inspired by traditional Mexican street corn, perfect for spring dinners.


Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the corn, red onion, cherry tomatoes, and cilantro.
  2. In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the corn mixture and toss to combine.
  4. Gently fold in the crumbled feta cheese.
