Ingredients

- 4 cups corn kernels (fresh or frozen)
- 1/2 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the corn, red onion, cherry tomatoes, and cilantro.
- In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the corn mixture and toss to combine.
- Gently fold in the crumbled feta cheese.
- Chill in the refrigerator for at least 30 minutes before serving.
