Description

A celebration of grilled corn coated in a creamy mixture of mayonnaise, lime, spices, and Cotija cheese for an explosive flavor experience.


Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/2 cup Cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Fill a large pot with water and bring it to a boil. Add the corn and cook for about 5-7 minutes until tender.
  2. While the corn is cooking, mix mayonnaise, lime juice, chili powder, salt, and pepper in a bowl.
  3. Once the corn is cooked, drain and cool slightly.
  4. Brush the mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle with Cotija cheese and additional chili powder, if desired.
  6. Garnish with chopped cilantro and serve immediately.

Notes

For a deeper flavor, grill the corn after boiling. Adjust the ingredients based on your taste preferences.
