- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/2 cup Cotija cheese, crumbled
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Fill a large pot with water and bring it to a boil. Add the corn and cook for about 5-7 minutes until tender.
- While the corn is cooking, mix mayonnaise, lime juice, chili powder, salt, and pepper in a bowl.
- Once the corn is cooked, drain and cool slightly.
- Brush the mayonnaise mixture evenly over each ear of corn.
- Sprinkle with Cotija cheese and additional chili powder, if desired.
- Garnish with chopped cilantro and serve immediately.
Notes
For a deeper flavor, grill the corn after boiling. Adjust the ingredients based on your taste preferences.
