Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the beef tenderloin of excess fat and silver skin.
  3. In a small bowl, mix together olive oil, salt, pepper, garlic, rosemary, thyme, and Dijon mustard.
  4. Rub the mixture all over the beef tenderloin.
  5. Heat a large oven-safe skillet over medium-high heat and sear the tenderloin on all sides until browned.
  6. Pour in the red wine and beef broth, then transfer the skillet to the preheated oven.
  7. Roast for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
