- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 can (14 oz) sweetened condensed milk
- 1 cup brown sugar
- 1/2 cup light corn syrup
- 1/2 cup heavy cream
- 2 cups semi-sweet chocolate chips
- 1/4 cup unsalted butter (for ganache)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the flour and salt, mixing until a dough forms.
- Press the dough into the bottom of a greased 9×9 inch baking pan.
- Bake for 20 minutes or until lightly golden. Remove from oven and let cool.
- In a saucepan, combine sweetened condensed milk, brown sugar, corn syrup, and heavy cream. Cook over medium heat, stirring constantly until it thickens (about 10 minutes).
- Pour the caramel mixture over the cooled shortbread layer and let it set for about 30 minutes.
- In another saucepan, melt the chocolate chips and 1/4 cup of butter over low heat, stirring until smooth.
- Pour the chocolate ganache over the caramel layer and spread evenly.
- Refrigerate for at least 2 hours before cutting into squares.
Notes
- For a richer flavor, use dark chocolate instead of semi-sweet.
- Make sure to let the layers cool completely before adding the next layer.
- Store in an airtight container in the refrigerator for up to a week.
