Ingredients

  • 1 lb beef tenderloin, trimmed
  • 1 sheet puff pastry, thawed
  • 8 oz mushrooms, finely chopped
  • 2 tbsp Dijon mustard
  • 1 egg, beaten
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are browned and moisture has evaporated.
  3. Season the beef tenderloin with salt and pepper, then sear it in the skillet until browned on all sides.
  4. Remove the beef and let it cool, then brush with Dijon mustard.
  5. Roll out the puff pastry and cut it into squares large enough to wrap around the beef.
  6. Place a spoonful of mushrooms on each pastry square, then top with a piece of beef.
  7. Wrap the pastry around the beef and seal the edges, then brush with beaten egg.
  8. Place the bites on a baking sheet and bake for 15-20 minutes or until golden brown.

Notes

  • Make sure the beef is at room temperature before cooking.
  • These can be made ahead of time and frozen before baking.
  • Serve with a dipping sauce for added flavor.
