- 1 lb beef tenderloin, trimmed
- 1 sheet puff pastry, thawed
- 8 oz mushrooms, finely chopped
- 2 tbsp Dijon mustard
- 1 egg, beaten
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are browned and moisture has evaporated. Season with salt and pepper.
- Season the beef tenderloin with salt and pepper, then sear it in the skillet until browned on all sides.
- Remove the beef from the skillet and let it cool. Once cooled, brush it with Dijon mustard.
- Roll out the puff pastry and cut it into squares large enough to wrap around the beef.
- Place a spoonful of the mushroom mixture on each pastry square, then place a piece of beef on top.
- Wrap the pastry around the beef and seal the edges. Brush the tops with beaten egg.
- Place the bites on a baking sheet and bake for 15-20 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- For extra flavor, add herbs like thyme or rosemary to the mushroom mixture.
- These can be made ahead of time and frozen before baking.
- Serve with a dipping sauce for added flavor.
