- 1 pound beef tenderloin, trimmed
- 1 tablespoon olive oil
- 1 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 package puff pastry, thawed
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper, then sear in olive oil over high heat until browned on all sides.
- Remove the beef from the pan and let it cool. In the same pan, add mushrooms and garlic, cooking until the mushrooms are soft.
- Spread Dijon mustard over the cooled beef, then top with the mushroom mixture.
- Roll out the puff pastry and cut into squares large enough to wrap around the beef.
- Place the beef in the center of each pastry square, fold the pastry over, and seal the edges.
- Brush the tops with beaten egg and place on a baking sheet.
- Bake for 20-25 minutes or until the pastry is golden brown.
Notes
- For extra flavor, add herbs like thyme or rosemary to the mushroom mixture.
- These bites can be made ahead of time and frozen before baking.
