Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth.
- Fold in the mini chocolate chips.
- Carefully spoon the filling into each mini phyllo cup.
- Place the filled cups on a baking sheet and bake for 10-12 minutes until the cups are golden brown.
- Remove from the oven and let cool for a few minutes.
- Garnish with chopped pistachios if desired before serving.
