Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sugar (for caramelizing)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In a separate bowl, beat the cream cheese until smooth.
  5. Add heavy cream, 1/2 cup sugar, eggs, and vanilla extract; mix until well combined.
  6. Pour the cheesecake mixture over the crusts in the mini pans.
  7. Bake for 20-25 minutes or until set.
  8. Let cool, then refrigerate for at least 4 hours.
  9. Before serving, sprinkle 1/4 cup sugar on top and caramelize with a kitchen torch.

Notes

  • For a vegan version, substitute cream cheese with vegan cream cheese and heavy cream with coconut cream.
  • Ensure the cheesecakes are fully cooled before caramelizing the sugar.
