- 1 package Oreo cookies
- 2 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream
- 1/4 cup mint chocolate chips
- Whipped cream for topping
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 325°F (160°C).
- Crush the Oreo cookies in a food processor and mix with melted butter.
- Press the cookie mixture into the bottom of a muffin tin lined with cupcake liners.
- In a large bowl, beat the cream cheese until smooth.
- Add sugar, vanilla extract, and mix until combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and mint chocolate chips.
- Pour the cheesecake batter over the crust in the muffin tin.
- Bake for 20-25 minutes or until the centers are set.
- Let cool, then refrigerate for at least 2 hours before serving.
- Top with whipped cream and chocolate shavings before serving.
Notes
- For a stronger mint flavor, add more mint chocolate chips.
- These cheesecakes can be made a day in advance.
- Store leftovers in the refrigerator for up to 3 days.
