- 1 cup pecans, chopped
- 1/2 cup brown sugar
- 1/4 cup corn syrup
- 1/4 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 package mini pie crusts
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt.
- Stir until well combined.
- Place the mini pie crusts on a baking sheet.
- Pour the pecan mixture into each mini pie crust, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the filling is set.
- Remove from the oven and let cool before serving.
Notes
- These mini pies can be made ahead of time and stored in an airtight container.
