- 1 cup butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup assorted fresh fruits (berries, kiwi, mango, etc.)
- 1/2 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and sugar in a bowl until smooth.
- Beat in the egg and vanilla extract.
- Combine flour, baking powder, and salt in another bowl; gradually blend into the creamed mixture.
- Roll small balls of dough and press them into the tartlet molds.
- Bake for 10-12 minutes or until edges are golden.
- Allow to cool.
- Beat together the cream cheese, powdered sugar, and lemon juice in a separate bowl until smooth.
- Spoon the cream cheese mixture into each cooled tart shell.
- Top with assorted fresh fruits.
- Refrigerate until ready to serve.
Notes
These tarts can be made diabetic-friendly by using sugar substitutes. Ensure fresh, ripe fruits for the best flavor.
