A classic comfort food from Minnesota, this Tater Tot Hotdish combines ground beef, vegetables, and creamy soup topped with crispy tater tots.

- 1 lb ground beef
- 1 onion, chopped
- 2 cups mixed vegetables (frozen or fresh)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bag (32 oz) tater tots
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef and onion over medium heat until the meat is cooked through.
- Stir in the mixed vegetables, cream of mushroom soup, sour cream, garlic powder, salt, and pepper until well combined.
- Spread the beef mixture evenly in a 9×13 inch baking dish.
- Top with tater tots in a single layer.
- Bake in the preheated oven for 30 minutes.
- Remove from the oven and sprinkle with shredded cheddar cheese.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

- Feel free to customize the vegetables based on your preference.
- This dish can be made ahead of time and stored in the refrigerator before baking.
