- 1-2 tablespoons heavy cream (or milk, as needed)
- 6 oz semi-sweet chocolate (about 3/4 cup chocolate chips)
- 1/2 cup unsalted butter (112 grams)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking pan and line it with parchment paper.
- Melt 1 cup of unsalted butter and 4 oz of semi-sweet chocolate in a large saucepan over low heat.
- Stir until smooth and let it cool slightly.
- Mix in 2 cups of white sugar until combined.
- Add 4 large eggs, one at a time, mixing well after each addition.
- Whisk in 1/4 cup cocoa powder, 1 cup all-purpose flour, and 1/2 teaspoon salt until just combined.
- Pour the brownie batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
- Prepare the mint filling by beating 1/2 cup softened unsalted butter with 2-4 drops of green food coloring and 1 1/2 teaspoons peppermint extract.
- Add 2-2 1/2 cups powdered sugar and 1/4 teaspoon salt.
- Mix in 1-2 tablespoons of heavy cream until the filling is fluffy and spreadable.
- Spread the mint filling evenly over the cooled brownies.
- Melt 6 oz of semi-sweet chocolate and 1/2 cup unsalted butter in a double boiler or microwave until smooth.
- Pour the chocolate topping over the mint layer and spread evenly.
- Chill in the fridge for at least 30 minutes before cutting into squares.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. Adjust the mint extract to your taste preference.
