Delicious and creamy cheesecake bars infused with mint and Baileys, topped with a rich chocolate layer.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- ½ cup Baileys Irish Cream
- 1 teaspoon peppermint extract
- 2 cups whipped cream
- 1 cup semi-sweet chocolate chips
- 2 tablespoons heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a greased baking pan.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Add Baileys and peppermint extract, mixing until well combined.
- Fold in whipped cream gently.
- Spread the cheesecake mixture over the crust evenly.
- Bake for 25-30 minutes until set.
- Let cool completely, then refrigerate for at least 4 hours.
- For the topping, melt chocolate chips with heavy cream until smooth.
- Spread the chocolate over the chilled cheesecake bars.
- Cut into squares and serve chilled.
Notes
- For a stronger mint flavor, increase the peppermint extract.
- These bars can be made a day in advance for better flavor.
- Store leftovers in the refrigerator for up to 5 days.
