Ingredients

  • 1 cup boiling water
  • 1/2 teaspoon peppermint extract
  • 2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • 1 cup mint chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add the eggs, milk, oil, and vanilla extract, mixing until well combined.
  4. Stir in the boiling water gradually until the batter is smooth.
  5. Divide the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow the cakes to cool completely.
  7. Beat the softened butter in a bowl until creamy for the mint chip buttercream.
  8. Add the powdered sugar gradually, then mix in the heavy cream and peppermint extract until fluffy.
  9. Layer the cooled cakes with buttercream filling and cover the entire cake with the remaining buttercream.
  10. Sprinkle mint chocolate chips on top. Enjoy!
