- 2 tablespoons heavy cream
- 1/2 teaspoon peppermint extract
- 1 cup mint chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add the eggs, milk, oil, and vanilla extract, mixing until well combined.
- Stir in the boiling water gradually until the batter is smooth.
- Divide the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow the cakes to cool completely.
- Beat the softened butter in a bowl until creamy for the mint chip buttercream.
- Add the powdered sugar gradually, then mix in the heavy cream and peppermint extract until fluffy.
- Layer the cooled cakes with buttercream filling and cover the entire cake with the remaining buttercream.
- Sprinkle mint chocolate chips on top. Enjoy!
