  • 3 large eggs
  • 1 cup sour cream
  • ½ cup brewed coffee, cooled

  • ¼ cup cocoa powder
  • 1 cup whipped cream for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream, brewed coffee, vanilla extract, and cocoa powder until fully incorporated.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set.
  8. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
  9. Top with whipped cream before serving.
