A deliciously moist pumpkin coffee cake topped with a 5-star cinnamon streusel, perfect for fall.

- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup canned pumpkin puree
- ½ cup sour cream
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- 1 teaspoon ground cinnamon (for streusel)
- ¼ cup all-purpose flour (for streusel)
- 2 tablespoons unsalted butter (for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the pumpkin puree, sour cream, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In another bowl, prepare the streusel by combining brown sugar, cinnamon, flour, and melted butter until crumbly.
- Pour half of the cake batter into the prepared pan, sprinkle half of the streusel on top, then add the remaining batter and top with the remaining streusel.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
- For a richer flavor, use fresh pumpkin puree instead of canned.
- This cake can be stored in an airtight container for up to 3 days.
- Serve warm with a drizzle of icing for an extra treat.
