- 2 cups water

- 1/4 cup fresh cilantro, chopped

Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, water, olive oil, and salt.
- Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and stir in the chopped cilantro and lime juice.
- Serve warm as a side dish.
