- 1 cup shredded sharp cheddar cheese

- 1 cup black beans, rinsed
- 2 tsp taco seasoning
- Vegetable oil for frying
Instructions
- Cook in a skillet over medium heat, cook the ground beef until fully browned. Stir in taco seasoning and jalapeños.
- Add shredded cheddar cheese and black beans; mix until cheese is melted.
- Place an egg roll wrapper diagonally on a clean surface.
- Spoon about 2 tablespoons of filling into the center.
- Fold according to package instructions.
- Heat vegetable oil in a deep pan over medium heat.
- Fry each egg roll until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels. Serve hot with salsa or sour cream.
Notes
For a healthier option, consider baking the egg rolls at 400°F for 15-20 minutes instead of frying.
