Description

Crunchy and savory Nacho Egg Rolls filled with seasoned beef, cheese, and jalapeños, perfect for any gathering.

Ingredients

Scale
  • 8 egg roll wrappers
  • 1 lb lean ground beef
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced fresh jalapeños (or canned)
  • 1 cup black beans, rinsed
  • 2 tsp taco seasoning
  • Vegetable oil for frying

Instructions

  1. Cook in a skillet over medium heat, cook the ground beef until fully browned. Stir in taco seasoning and jalapeños.
  2. Add shredded cheddar cheese and black beans; mix until cheese is melted.
  3. Place an egg roll wrapper diagonally on a clean surface.
  4. Spoon about 2 tablespoons of filling into the center.
  5. Fold according to package instructions.
  6. Heat vegetable oil in a deep pan over medium heat.
  7. Fry each egg roll until golden brown and crispy, about 3-4 minutes per side.
  8. Remove from oil and drain on paper towels. Serve hot with salsa or sour cream.

Notes

For a healthier option, consider baking the egg rolls at 400°F for 15-20 minutes instead of frying.
