Instructions
- In a large bowl, combine the cooked quinoa, chia seeds, almond butter, honey or maple syrup, cocoa powder, vanilla extract, and salt.
- Mix well until all ingredients are thoroughly combined.
- If using, fold in the dark chocolate chips.
- Using your hands, form the mixture into small bite-sized balls.
- Place the bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
