Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 cups whipped topping
- Green food coloring
- Chocolate shavings (for garnish)
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a 9×9 inch pan.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add powdered sugar, vanilla extract, and peppermint extract, mixing until well combined.
- Fold in the whipped topping and a few drops of green food coloring until desired color is achieved.
- Spread the cheesecake mixture over the crust in the pan.
- Refrigerate for at least 4 hours or until set.
- Cut into bars and garnish with chocolate shavings before serving.
Notes
- For a stronger mint flavor, increase the amount of peppermint extract.
- Store leftovers in the refrigerator for up to 3 days.
- These bars can be frozen for longer storage; just thaw before serving.
