Description

Delicious and festive cheesecake bars inspired by the classic Shamrock Shake, perfect for St. Patrick’s Day.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 cups whipped topping
  • Green food coloring
  • Chocolate shavings (for garnish)

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a 9×9 inch pan.
  2. In a large mixing bowl, beat the cream cheese until smooth.
  3. Add powdered sugar, vanilla extract, and peppermint extract, mixing until well combined.
  4. Fold in the whipped topping and a few drops of green food coloring until desired color is achieved.
  5. Spread the cheesecake mixture over the crust in the pan.
  6. Refrigerate for at least 4 hours or until set.
  7. Cut into bars and garnish with chocolate shavings before serving.

Notes

  • For a stronger mint flavor, increase the amount of peppermint extract.
  • Store leftovers in the refrigerator for up to 3 days.
