Instructions
- In a large bowl, combine the rolled oats, sunflower seed butter, honey or maple syrup, chocolate chips, ground flaxseed, and vanilla extract.
- Mix until all ingredients are well combined.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
